This is a great waffle recipe.  A lot of vegan waffle recipes call for things like molasses, barley malt syrup and apple cider vinegar, but this recipe gets its acidity and sweetness from beer instead.  Plus, the beer gives the waffles a rich flavor that other waffles lack.  This recipe also uses some whole wheat flour (because all-purpose flour is just too boring on its own) and coconut oil (because it’s so much yummier than canola oil).

Coconut oil is solid at room temperature. Just microwave for 15 seconds to liquify for cooking.

Vegan Beer Waffles

3/4 cup all purpose flour

3/4 whole wheat flour

2 teaspoon baking powder

1/2 teaspoon salt

1/2 cup sugar

1 cup almond milk

3/4 cup beer

1/4 cup coconut oil

1 teaspoon vanilla

Whisk together the flour, sugar, baking powder and salt in a large bowl.  Add the almond milk, beer, coconut oil and vanilla and mix until combined.  Grease your waffle iron with coconut oil and make some waffles!

I don't like cooking sprays so I use a silicone basting brush to grease my waffle iron with coconut oil.
